Zach Dimmitt

Zachary Dimmitt is Director of Food and Beverage at Hilton Omaha, Nebraska’s largest hotel in downtown Omaha.
Born and raised in Iowa, Dimmitt fell in love with food through spending time cooking with his grandmothers and working at a local diner in high school, crafting dishes and sauces for the Sunday brunch crowd. In 2011, Dimmitt’s hotel food and beverage career began as restaurant manager for Coralville Marriott Hotel & Conference Center in Coralville, IA. Then Dimmit went on to become the restaurant manager at DoubleTree by Hilton Hotel Cedar Rapids in 2013. Moving to Denver in 2014, Dimmit worked at Denver Marriott City Center and the Sheraton Denver Downtown. In 2018, Dimmitt ventured to Omaha to join the Hilton Omaha team as the Director of Food & Beverage, developing and leading a solid team to service visiting groups to the hotel.
Dimmitt was part of the opening team at Nick’s Quorum Bar & Supper and played a pivotal role in developing the restaurant’s beverage program. He is excited to help bring a new culinary concept to the Omaha food scene: a modern supper club experience for guests without a membership. At Nick’s Quorum Bar & Supper Club, Dimmitt values fostering personal connections with his guests and employees.
Outside of work, Dimmitt can be found spending time with his wife and three daughters or working on his hobby as a self-taught woodworker.
